Актуальність теми: Одеська область має великий потенціал для розвитку
виноробства. Будівництво виноробні в Овідиопольскій громаді є важливим кроком у розвитку виноробної промисловості в цьому регіоні і може сприяти зростанню економіки та створенню нових робочих місць. Ампелографічні показники підходять для вирощування винограду, вдале розташування заводу дає змогу для розвитку туризму в регіоні.
Мета роботи: Головною метою роботи є будівництво виноробні в умовах Овідиопольскої громади Одеського району з впровадженням принципів гравітації.
Практичне значення отриманих результатів: Роботою передбачено будівництво виноробні з впровадженням принципів гравітації, яка буде сприяти зростанню економіки та створенню нових робочих місць.
Структура роботи: Кваліфікаційна робота складається з пояснювальної записки, яка включає: Вступ, Розділ 1 Науково-дослідна частина, 1.1. Аналітичний огляд літератури та патентних джерел, 1.1.1. Сучасний стан виробництва рожевого вина в світі, 1.1.2. Сучасні архітектурні рішення щодо будівництва виноробень, 1.1.3. Сучасний стан виробництва рожевого вина з використанням дубових альтернатив, 1.2. Методологія досліджень, 1.2.1. Об’єкт досліджень, 1.2.2. Предмет досліджень, 1.2.3. Методи досліджень. Розділ 2. Технологічна частина, 2.1. Характеристика теруару та технологічний концепт, 2.2. Характеристика сортів винограду Сухолиманський білий, Тельті Курук, Каберне Совіньйон, Одеський чорний, 2.3. Обгрунтування прийнятих технологічних схем виробництва, 2.4. Характеристика технологічних об’єктів та комунікацій генерального плану, 2.5. Графік переробки винограду на виноматеріали 2024р., 2.6. Structure of the work: The qualification work consists of an explanatory note, which includes: Introduction, Section 1 Research part, 1.1. Analytical review of literature and patent sources, 1.1.1. Current state of rosé wine production in the world, 1.1.2. Modern architectural solutions for the construction of wineries, 1.1.3. Current state of rosé wine production using oak alternatives, 1.2. Current auxiliary materials in the production of still wines, 1.2. Research methodology, 1.2.1. Object of research, 1.2.2. Subject of research, 1.2.3. Research methods. Section 2. Technological part, 2.1. Characteristics of terroir and technological concept, 2.2. Characteristics of grape varieties Sukholymanskyi white, Telti Kuruk, Cabernet Sauvignon, Odessa black, 2.3. Justification of the adopted technological schemes of production, 2.4. Characteristics of technological facilities and communications of the general plan, 2.5. Schedule of processing grapes into wine materials in 2024, 2.6.
