By selective use of various anatomical components of the grain body, it is possible to change the energy value of food products by 1.5-2.0 times, several times – the content of vitamins, microelements and biologically active components, such as enzymes. those. Advanced processing technologies can significantly control the nutritional value of grain products, in particular by changing the content of dextrins or pasteurized starch grains several times. The selective use of various anatomical components of the grain body of a wide range of crop fruits in combination with the controlled technologies of their indepth processing can give these products preventive and curative properties. Grain products of different levels of processing technologies can cover the shortage of products of animal origin, reduce the negative impact of animal husbandry on the planet's ecosystem, take into account the needs of different social, life activity and age groups, as well as improve the availability of food to socially vulnerable segments of the population.
